This Cabbage Roll Soup is healthy, comforting and unbelievably delicious. It’s everything I know and love about my Romanian Meatball Soup (Ciorbă de Perișoare) - think tender, savoury, herby meatballs studded with rice and simmered in an aromatic, tomato-y and slightly sour broth - but with the welcome addition of hearty cabbage. The combo makes for a deconstructed Romanian-style cabbage roll (sarmale) but in soup form and much easier to make. It also happens to be gluten-free and comes together in a single pot in less than an hour. It’s incredible as is but even better with a dollop of sour cream and spicy chile pepper on the side.
This recipe is gluten-free and can be made dairy-free by omitting the sour cream garnish.
